Blackberry Thyme Sparkler: Ok, so this was a major fail. As a collective group we have decided we do not like thyme in our cocktails as this wasn't the first time something with thyme went horribly wrong. So...tread lightly and at your own risk.

Recipe:
Produce
- 1 zest of lemon Large
- 1 C Wild frozen blueberries
- .5 oz ginger
Condiments
- 1 C sugar
- 1 C of water
Baking & Spices
- 2 sprigs of thyme
Frozen
- 1 Ice
Beer, Wine & Liquor
- 1 Oz Gin
- Champagne
To make: Make a simple syrup using blackberries, water, thyme and sugar to a boil. Reduce heat and simmer for 5 minutes until the berries are soft. Remove from heat and strain once cool.
Note: use a small amount of butter to get sugar/salt to stay on the rim
In champagne glass add gin, 1 oz of simple syrup and top with champagne.

Everyone tasting the simple syrup: "Yep it's the thyme" We do not like thyme in our cocktails.
